Sabaté i Coca Xarel·lo Vermell is a distinctive, high-end Corpinnat made exclusively from Xarel·lo Vermell, a rare pink-skinned mutation of traditional Xarel·lo, sourced from a single plot with clay-limestone soils. It undergoes a minimum of 18 months of ageing on the lees, offering a highly distinctive gastronomic profile. It stands out for its subtle aromas of wild red fruit and peach skin, nuances of white flowers, Mediterranean aromatic herbs, and delicate bakery notes. On the palate, it is very dry, fresh, broad, and saline, with fine bubbles and a creamy texture that lead to a persistent finish of great elegance.

It presents a unique pale yellow color with delicate orange and coppery reflections, characteristic of the skin of Xarel·lo Vermell, and a remarkably bright appearance. Its bubbles are extremely fine and delicate, with a slow stream that culminates in a fine, persistent crown.
Nose:
On the nose, it is complex, expressive, and highly elegant. It reveals a refined aromatic profile, with notes of small red berries, such as redcurrants and wild raspberries, along with citrus peel and vineyard peach, interwoven with hints of almond blossom, Mediterranean scrubland herbs, and a subtle underlying layer of brioche, yeast, and nuts imparted by its extended ageing.
Palate
On the palate, it opens with great freshness, tension, and elegance. The bubbles are creamy and silky, perfectly integrated. It offers an enveloping texture, with an appealing touch of bitterness from the grape skin that gives it character, together with vibrant acidity and a distinct saline undertone.
