Albet i Noya
Albet i Noya is a pioneering, family-owned winery based in Sant Pau d’Ordal, in the Penedès region of Catalonia. It’s celebrated for being Spain's first certified organic winery and a leader in sustainable, terroir-driven winemaking. The winery was the first in Spain to receive organic certification (Catalan council, CCPAÉ) in 1982. Practices include cover crops, organic fertilisers, natural pest control, near elimination of copper and a 90%-sulfur reduction. Josep Maria Albet also led the VRIAACC project—championing indigenous, disease-resistant grape varieties adapted to climate change. Albet i Noya is a hallmark of organic viticulture in Spain—merging heritage (since 1903), environmental stewardship, and quality. Cava & Hotell Mastinell
Cava House Mastinell, officially Cava & Hotel Mastinell near Vilafranca del Penedès, is a one-of-a-kind 5-star boutique hotel and winery designed for wine lovers and architecture enthusiasts alike. A boutique winery located in the heart of DO Penedès, fully certified as an “Elaborador Integral” (whole-process producer), meaning they handle everything from manual harvesting to second fermentation and bottling on-site. Production (~200,000 bottles/year) is split evenly between still wines and long-aged cavas. Founded in 1980 as Heretat Mas Tinell (a name derived from Catalan for "estate" + "amphora") by the Valderrama family, property developers led by Manuel Valderrama Blanca. In 1995, the estate was officially renamed Mastinell when Manuel Valderrama acquired it, transforming it into a vertically-integrated, boutique winery while maintaining traditional Catalan roots.

Codorniu
Codorníu is the oldest winery in Spain and one of the world's leading sparkling wine producers. Founded in 1551 in Sant Sadurní d'Anoia (Catalonia), it pioneered the production of the first Cava using the traditional method in 1872.

Freixenet
Freixenet’s story began in 1914, when Pedro Ferrer Bosch (of the Ferrer family, owners of La Freixeneda since the 12th century) married Dolores Sala Vivé (heiress of Casa Sala, founded in 1861). They released the first sparkling Cava under the Freixenet name. The name “Freixenet” originates from Pedro’s nickname, inspired by the ash trees ("freixe") around their estate. The couple opened an office in New Jersey in the 1930s to export Cava—uncommon at the time. Freixenet marries deep family tradition, bold technical innovation, and keen global marketing —from frosted bottles in the 1940s to celebrity-studded campaigns and today’s vast export reach. Freixenet and Henkell are two of Europe’s most prominent sparkling wine producers that came together in 2018 to form the Henkell Freixenet Group—now the world's largest producer of traditional-method sparkling wine. Some brands that fall under the group are Segura Viudas, Henkell, Mionetto, Alfred gratien and I heart wines.

Llopart
Cavas Llopart is one of Spain’s most venerable and respected sparkling wine estates—deeply rooted in history, craftsmanship, and ecological commitment. Viticulture dates back to 1385, when Bernardus Leopardi received the Can Llopart de Subirats estate, marking over 600 years of continuous family involvement in winemaking. The first sparkling wine was bottled in 1887, making Llopart the oldest family-owned traditional-method sparkling winery in Spain. In the 1950s, Pere Llopart i Vilarós elevated the estate’s profile by focusing on artisanal quality and cementing its reputation for excellence. They embrace traditional méthode champenoise: gentle whole-cluster pressing, spontaneous fermentation, secondary in-bottle fermentation, and long lees aging (typically 24+ months).
