The Ayala Brut Majeur is a Champagne made with 55% Chardonnay, 30% Pinot Noir and 15% Pinot Meunier, which spends aging for around 3 years on lees to gain complexity. It has a pale gold color with fine, persistent bubbles. It offers notes of citrus, green apple, white flowers and a delicate touch of brioche, while on the palate it is dry, fresh and balanced, with good minerality and vibrant acidity.
Champagne Ayala, founded in 1860 in Aÿ, France, is a historic house known for its elegant style and low-dosage champagnes. Since 2005, it has belonged to the Bollinger family, who has revitalized its image and quality.
