This maceration technique, lasting several days, gives the wine an intense color and a rich aromatic expression. It is aged on its lees for a period of 2 to 3 years, which contributes to its complexity and elegance. It is an expressive and fresh Champagne, with a creamy texture and a subtly fruity finish.
The Drappier winery, founded in 1808 in Urville, Champagne, is characterized by its respect for tradition, focus on authenticity, and sustainable cultivation of Pinot Noir, limiting the use of sulfites to preserve the purity of its champagnes.
